Striftaria with cheeses

Ingredients for the dough

  • 2 tablespoons sugar
  • 1 cup of lukewarm water
  • 1 sachet of dry yeast
  • 2 eggs
  • 220 gr. Xinotiri Pittaras
  • 1 envelope of baking powder
  • 3/4 cup corn oil
  • 1 tablespoon salt
  • 750 – 780 gr  flour (for all uses)

Ingredients for the filling

  • 2 cups Xinotiri Pittaras
  • 1 cup grated Graviera Naxou Pittaras 12-months matured
  • 1 cup grated Graviera Pittaras
  • 1 cup grated Graviera Pittaras Mpastouni with basil
  • 1 cup grated Graviera Pittaras Mpastouni with oregano
  • 1/2 teaspoon nutmeg
  • 2 pinches bachari (spice)
  • 1 beaten egg yolk and sesame seeds

Instructions

Τake balls from the dough and open them on grated cheeses and a little flour, then we twist them and place them in a buttered pan. Spread them with egg yolk, sprinkle with sesame seeds and pour a little balsamic sauce with pomegranate over them. Bake at 170oC for 25 minutes on medium heat.
